A Rainbow Salad with a zingy citrus dressing

Rainbow Salad

  • shredded red cabbage
  • sprouted chickpea sprouts
  • shredded carrots
  • shredded courgette (also called zucchini)
  • avocado
  • chopped coriander
  • toasted sesame seeds

Roughly chop all salad ingredients and toss together. Arrange this colorful masterpiece on a beautiful plate and drizzle the dressing artfully on top and enjoy every last mouthful! The options of what you can use in this recipe are endless and it’s always best to eat what is in season. As our eyes are the first sense to stimulate our taste buds, we feel it’s¬†important to make your salad look like a rainbow and celebration of food. How said licking the plate was rude anyway???

Dressing

  • 1 orange (just the juice)
  • 1/2 cup coconut meat
  • 1/2 parsley
  • 1/2 lemon (just the juice)
  • 1 lime (just the juice)
  • 1 Tbsp tahini
  • Small knob of grated ginger
  • 1 Tbsp of honey

Blend all the ingredients in a blender until smooth. Water can be added if too thick until desired consistency. More honey can also be added depending on how much of a kick you want this dressing to have.
